Roasted Turkey Delight

Roasted Turkey + Oil-Free Smoky Jollof Rice + Peppered Spinach

  • 2 turkey thighs or wings
  • 1 tbsp smoked paprika
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tsp cayenne pepper
  • 1 tsp dried thyme
  • 1 tbsp low-sodium soy sauce
  • Salt
  • Cameroon pepper
  • 6 sweet peppers
  • 2 Bell peppers
  • 2 Habanero peppers
  • ½ cup vegetable or chicken broth (for moisture)
  • 2 turkey thighs or wings
  • Marinate the turkey with all the spices and soy sauce. Let it sit for at least 2 hours (or overnight).
  • Preheat oven to 375°F (190°C).
  • Place turkey on a baking tray with vegetable broth at the bottom for moisture.
  • Roast for 40-50 minutes, basting occasionally.
  • Broil for 5 minutes for a crispy finish.
  • Blend the bell peppers (should not be in liquid form)
  • Boil the Bell peppers for 10 mins to remove moisture.
  • Boil the peppers with the cooked turkey and serve.
