Roasted Chicken Quarters + Oil-free Fried Rice + Kale Slaw

  • 2 chicken quarters
  • 1 tbsp suya spice mix
  • 1 tsp garlic powder
  • 1 tsp ginger powder
  • 1 tbsp lemon juice
  • 6 sweet peppers
  • 2 habanero peppers
  • 1 red, yellow and green bell,
  • 1 tbsp honey
  • Peri peri chicken sauce
  • Salt & black pepper
  • Marinate chicken for at least 2 hours.
  • Grill or roast at 375°F (190°C) for 40 minutes.
